Chia & Apple Bircher With Blackcurrant Compote

INGREDIENTS

For the blackcurrant compote

150g British blackcurrants 

Juice from 1 clementine (sub for 50ml orange juice)

60g golden caster sugar

Small pinch sea salt (⅛ tsp)

 

For the bircher (per person)

3 tbsp chia seeds 

3 tbsp water (around 90-100ml)

3 tbsp plant based yogurt (Nush is a british and organic brand)

1 small apple grated

½ tsp cinnamon (optional)

METHOD

To make the compote, add all of the ingredients into a small pot and bring to a simmer for around 5 minutes.

Add the couli to a food processor or grind in a pestle and mortar to make a smooth texture (we saved 2-3 blackcurrants to top each chia bircher).

To make the chia bircher simply pour the chia seeds and water into the glass / bowl and leave to thicken for around 5 minutes before adding in the yogurt, cinnamon and grated apple and mix together.

Add the blackcurrant compote on top (hot or cold works) with a few blackcurrants on top to garnish.
