Vegan Blackcurrant Chia Seed Pudding

32g chia seeds
125ml almond milk (or milk of your choice)
125ml coconut milk (or milk of your choice)
1 tbsp maple syrup
1 tsp vanilla extract
Zest of 1 lime
64g blackcurrants (fresh or frozen, plus some for topping)
Fresh fruit of your choice to serve

Mix the chia seeds, almond milk, coconut milk, maple syrup, vanilla extract, zest of one lime. Set aside.
Puree the blackcurrants in a blender or food processor. Strain and add to the chia pudding.
Mix the chia pudding well and place in the fridge for at least one hour or overnight.
Serve with fresh fruit of your choice.
